Ingredients

  • 1/4 cup olive oil
  • 1 tablespoon red wine vinegar
  • 1 lemon (zested and juiced)
  • 4 cloves garlic (grated or minced)
  • 2 teaspoons honey
  • 1 tablespoon dried oregano
  • 1 teaspoon onion powder
  • 1 1/2 teaspoons kosher salt
  • 1/2 teaspoon black pepper
  • 1 pound chicken (breasts, thighs, or legs, pounded to a uniform thickness)

Instructions

  1. Whisk together all the marinade ingredients in a medium bowl or glass measuring cup.
  2. Place the chicken in a large Ziploc bag or shallow casserole dish. Pour the marinade over the chicken, ensuring it’s fully coated.
  3. Seal the bag or cover the dish, and refrigerate for at least 30 minutes or up to overnight for maximum flavor absorption.
  4. Allow the chicken to sit at room temperature for 20 minutes before cooking.
  5. Grill, pan-sear, or bake the chicken until it reaches an internal temperature of 160°F. Let the chicken rest for 5-10 minutes before slicing and serving.

  • For quicker cooking, cut chicken breasts in half and pound them to an even thickness.
  • If grilling, preheat your grill and lightly oil the grates for better results.
  • For an extra flavor boost, reserve a small amount of marinade to baste the chicken while cooking.
  • Chicken can be cooked on the grill, in a skillet, or baked in the oven. Ensure it’s fully cooked to an internal temperature of 160°F.
