Honey Mustard Chicken Salad is a delicious, hearty dish that combines juicy grilled chicken, crispy bacon, tangy gorgonzola cheese, and fresh berries, all topped with a creamy honey mustard dressing. This salad is perfect for a light yet satisfying meal.

Ingredients

  • Honey Mustard Dressing: 3/4 – 1 cup plain Greek yogurt, 2 tablespoons yellow mustard, 2 tablespoons Dijon mustard, 2-3 tablespoons honey, 1 teaspoon lemon zest, pinch of kosher salt and ground black pepper
  • Boneless, Skinless Chicken Breasts: 4 breasts
  • Chicken Marinade: 1/4 cup soy sauce (or tamari or coconut aminos), 2 tablespoons extra virgin olive oil (or avocado oil), 2 teaspoons Worcestershire sauce, 2 teaspoons minced garlic, 1 teaspoon lemon juice, 1 teaspoon lemon zest, 1/8 teaspoon kosher salt, 1/8 teaspoon ground black pepper
  • Romaine Lettuce: 4 cups chopped
  • Gorgonzola Cheese: 1 cup crumbled
  • Slivered Almonds: 1 cup
  • Bacon: 1 cup crumbled
  • Blueberries: 1 1/2 cups
  • Dried Cranberries or Cherries: 1/2 cup

Instructions

  1. Prepare the Honey Mustard Dressing: Combine Greek yogurt, yellow mustard, Dijon mustard, honey, lemon zest, salt, and pepper in a mason jar or small bowl. Shake or whisk until smooth, then set aside.
  2. Marinate the Chicken: Whisk together soy sauce, olive oil, Worcestershire sauce, minced garlic, lemon juice, lemon zest, salt, and pepper. Pour over the chicken breasts and refrigerate for at least 30 minutes.
  3. Grill the Chicken: Preheat the grill to medium heat. Grill the chicken for 4-5 minutes per side, until the internal temperature reaches 160°F. Let the chicken rest for 5 minutes, then slice.
  4. Assemble the Salad: On a large platter or individual bowls, arrange the lettuce, bacon, almonds, gorgonzola, blueberries, and cranberries. Top with sliced chicken and drizzle generously with the honey mustard dressing.
  5. Serve and enjoy immediately!

Notes

  • If you prefer chicken thighs, they make a great substitute for chicken breasts.
  • Make the dressing ahead of time and refrigerate it for convenience.
