  • 1 tbsp butter

  • 1/2 tsp cinnamon
  • 2 tbsp butter (for glaze)
  • 1/4 cup pure maple syrup
  • 1/2 cup powdered sugar
  • 1/4 tsp vanilla extract (for glaze)
  • 1/8 tsp ground cinnamon (for glaze)

Instructions

  1. Preheat oven to 350°F and line an 11×7-inch pan with tin foil or cooking spray.
  2. In a medium saucepan, cook the apples, brown sugar, butter, vanilla extract, and cinnamon over medium-low heat for 3-4 minutes until apples soften. Remove from heat and let cool.
  3. In a large mixing bowl, cream the butter until light and fluffy. Add brown sugar and granulated sugar, mixing until well combined.
  4. Add eggs, one at a time, beating well after each addition. Stir in salt and vanilla extract.
  5. In a separate bowl, whisk together flour, baking powder, and cinnamon. Add this dry mixture to the wet ingredients and stir until fully combined.
  6. Spread half of the blondie batter in the prepared pan. Top with the cooled apple filling, then spread the remaining batter over the apples.
  7. Bake for 25-30 minutes or until golden brown and a cake tester comes out clean. Allow to cool for 10 minutes.
  8. For the glaze, melt butter, maple syrup, vanilla extract, and cinnamon over low heat. Sift in powdered sugar and whisk until smooth. Let cool for 8-10 minutes to thicken.
  9. Pour the cooled glaze over the blondies and allow to set before slicing into squares.
