  • 1/2 cup raspberry puree or sauce (120ml): moistens layers and boosts berry flavor
  • 1/4 cup powdered sugar (30g): smooths and sweetens mascarpone mixture
  • 1/4 cup white chocolate shavings (about 30g, optional): adds sweetness and decoration

Instructions

  1. Prepare the raspberry sauce by blending 2 cups (250g) raspberries with 1 tablespoon (15ml) lemon juice and a portion of the sugar until smooth, then set aside to cool completely.
  2. In a mixing bowl, whip 1 cup (240ml) heavy cream until soft peaks form, ensuring a light and airy texture for the Raspberry Tiramisu filling.
  3. In a separate bowl, combine 1 1/2 cups (340g) mascarpone cheese, 1/4 cup (30g) powdered sugar, 1 teaspoon (5ml) vanilla extract, and remaining sugar until smooth and creamy.
  4. Gently fold the whipped cream into the mascarpone mixture, keeping the filling light and fluffy.
  5. Quickly dip ladyfingers (24 pieces / about 200g) into raspberry sauce (about 1/2 cup / 120ml), making sure they are lightly coated but not overly soaked.
  6. Arrange a layer of dipped ladyfingers in a serving dish to form the base of the Raspberry Tiramisu.
  7. Spread a layer of mascarpone cream evenly over the ladyfingers.
  8. Add spoonfuls of raspberry sauce or fresh raspberries for extra fruity flavor.
  9. Repeat layers until ingredients are used, finishing with a smooth mascarpone layer on top.
  10. Cover and refrigerate the Raspberry Tiramisu for at least 6 hours or overnight to allow flavors to develop.
  11. Before serving, garnish with 1/4 cup (30g) white chocolate shavings and fresh mint leaves if desired.
