  • 1 1/4 cups vegetable oil
  • 2 large eggs
  • 1/2 cup sour cream
  • 1/2 cup whole milk
  • 1 tablespoon vanilla extract
  • 1 tablespoon white vinegar
  • Red gel food coloring (a few drops)
  • 2 cups powdered sugar
  • 4 oz cream cheese, softened
  • 1/2 cup heavy cream
  • 1 tablespoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 10-inch bundt pan with baking spray or butter and flour.
  2. Prepare cream cheese filling: Beat together cream cheese, butter, and granulated sugar until light and fluffy. Add egg, flour, and vanilla extract and continue mixing until smooth. Set aside.
  3. Make the cake batter: In a medium bowl, whisk together flour, cocoa powder, baking soda, and salt. In a large bowl, cream together butter and sugar. Add eggs one at a time, beating well after each addition. Mix in vanilla extract. Gradually add dry ingredients to the wet ingredients, alternating with buttermilk and vinegar mixture. Add red food coloring until desired color is reached.
  4. Assemble the cake: Pour half of the cake batter into the prepared bundt pan. Top with cream cheese filling, leaving a small border around the edges. Top with the remaining cake batter. Lightly swirl the filling with a butter knife.
  5. Bake for 55 to 65 minutes, or until a toothpick comes out clean. Let the cake cool completely in the pan before inverting onto a cake plate.
  6. Prepare the icing: Beat powdered sugar, cream cheese, heavy cream, and vanilla extract until smooth. Drizzle the icing over the cooled cake.
