  • 1 teaspoon lemon zest
  • 1/4 cup white granulated sugar

Instructions

  1. Preheat oven to 375°F (190°C) and line an 8×8-inch baking pan with parchment paper.
  2. In a bowl, combine 2 cups flour, 1/2 cup brown sugar, and 1/2 teaspoon baking powder. Add 1/2 cup melted butter, 1 egg, and 1 teaspoon vanilla extract. Mix until a crumbly dough forms.
  3. Press half of the crumb mixture firmly into the prepared pan to form the base layer.
  4. In another bowl, beat 1 (250 g) softened cream cheese, 1/4 cup powdered sugar, 1 egg, and 1 teaspoon vanilla extract until smooth and creamy.
  5. Spread the cheesecake mixture evenly over the crust.
  6. In a separate bowl, mix 2 cups chopped strawberries, 1 teaspoon lemon juice, 1 teaspoon lemon zest, 1/4 cup sugar, and 1 tablespoon cornstarch until combined.
  7. Spoon the strawberry mixture evenly over the cheesecake layer, avoiding excess liquid.
  8. Sprinkle the remaining crumb mixture over the top.
  9. Bake for 40–45 minutes or until golden brown and set in the center.
  10. Allow to cool for at least 30 minutes, then chill for cleaner slicing before serving.
